I love adding this chicken to a chicken burrito bowl with coriander rice and corn salsa. This is also a chipotle copy cat recipe, but there are endless options for how to enjoy this chicken.

- Chicken thighs too: If you prefer the options that have more leme, boneless skinless chicken breasts will also work, but be careful not to overcook them.
- Adobo’s Chipotle Pepper:Do you have canned chipotle? Use a gentle smoky flavor, using 1 teaspoon of chipotle powder or smoked paprika.
- Advo Source: If you don’t have the adbo sauce, mix a little tomato paste with vinegar and smoked paprika to get a similar depth of flavor.
How to make imitation chipotle chicken
Step 1: Combine the ingredients for the chicken marinade into a bowl or blend into a food processor or blender.
Step 2: Add the marinade to a large ziplock bag or airtight container with chicken thighs and marinate for at least an hour, but up to 24 hours.
Step 3: When the chicken is ready to cook, add 1 tablespoon of oil to the pan over medium heat. Discard the marinade and add the chicken to the pan. Cook for 7-8 minutes on each side, or until brown on the outside, and until an internal temperature of 165°F is reached on the inside.
Step 4: Once cooked, transfer the chicken to a cutting board. Let it rest for a few minutes before serving. Cut the chicken into bite-sized pieces and work as you would like.
