You love my good chopped salad and this shiraji salad is something I’ve made repeatedly. It has such a fresh, Harvey goodness It’s a Greek salad, but it has a bit of Persian talent. Think of it as crisp, juicy, citrusy and ridiculously easy to throw together.
If you tried me Mediterranean Quinoa Salad or Cucumber tomato salad, this is just above your alley. It’s light and refreshing, and somehow tastes better after a bit of sitting.

- Cucumber – I like to use British cucumbers and Persian cucumbers, as they are crisp and have little water.
- Red onion – Add the right amount of crunch and chew a little.

- Fresh herbs – The parsley, mint and dill mix makes this salad pop with flavour.

- Do you have rabbits? no problem!: Sumac adds a slightly tangy, earthy flavour, but if you don’t have it, try a small pinch of lemon zest or a sprinkle of smoked paprika and add another twist.
- Cucumber options: English and Persian cucumbers are the best because they have little water, but if everything you have is a regular cucumber, scoop up some seeds before chopping.
