It’s been a minute since I shared the bowl recipe, but I love Bowl meals, and these Greek chicken bowls, are my latest obsession!
What is a bowl meal? It’s simple. Throw grains, proteins and vegetables into a bowl and add delicious sauces, dressings and the finished product. It’s the perfect meal.
These Greek chicken bowls are all filled with juicy and perfectly seasoned Greek chicken, refreshing cucumber tomato salad, creamy hummus and azaleas. The bites are all fresh, Herbie and tasty!
This recipe is perfect for both meal preparation and weekday dinners. You can make everything in advance, so all you need to do is assemble it and enjoy it.

- Boneless skinless chicken thighs – I love using boneless skinless chickens and thighs too. Chicken thighs are coated with a simple seasoning mixture containing oregano garlic powder, onion powder, lemon zest, salt and pepper. Once the internal temperature reaches 165°F, you will see that the chicken is ready.
- Cucumber and tomato – The ultimate refreshing and crisp combo.
- Red onion – Add the right amount of bite to the cucumber and tomato salad.
- Fresh parsley – Fresh, Harvey’s goodness pop to salad.
- Lemon juice and olive oil – The simplest and most flavorful dressing for cucumber and tomato salad.
- Mixed Green – Add freshness and nutrients.
- Rice Pilaf -I used Far East Original or Garlic & Herbs, and any kind works!
- Feta cheese – Because the Greek bowl is not finished without a slightly salty and creamy feta.

Easy recipe alternatives
- I’ll change the chicken: Are you a fan of chickens and thighs? Use chicken breast instead or try the vegetarian options with shrimp, salmon or crunchy air fryer tofu.
- Change the grain: Rice pilaf is classic, but if you want something different, you can replace it for turmeric rice, quinoa, cauliflower rice, or orzo.
- Dairy-free: Skip the feta and use dairy-free yogurt to make the tutupigi look creamy and tasty and dairy-free.
- Add more vegetables: Raise the bowl quite a bit in a bowl for a more Mediterranean flavour with roasted peppers, kalamata olives or artichoke hearts.

How to make a Greek chicken bowl (step-by-step)
Step 1: Combine Greek yogurt, cucumber, garlic, lemon juice, crust and dill in a small bowl to make the tutupeki sauce. Season with salt and pepper. Store in the fridge until ready.
Step 2: Combine all the ingredients in a medium bowl to make a cucumber salad. Taste and adjust the seasonings as needed. Store in the fridge until ready.
Step 3: In a small bowl, mix the salt, dried oregano, onion flour, garlic flour, pepper and lemon zest.
Step 4: From Pat Chicken Dry, coat with a seasoning mixture. Add the chicken and thighs to a 9×13 baking dish.
Step 5: Bake for 25-30 minutes until the chicken is brown and the internal temperature is 165°F. Let the chicken rest for about 5 minutes before slicing.
Step 6: To assemble the bowl, divide the rice between four bowls, followed by mixing the greens, chicken, cucumber tomato salad, azalea, hummus and feta. If used, drizzle with tahini sauce. enjoy!

How to prepare in advance
This is the ultimate meal preparation bowl. Prepare all the components in advance and enjoy a delicious meal in just a few minutes! This is what I do:
- chicken – Cook the chicken 1-3 days beforehand for quick assembly.
- Rice Pilaf – This rice is hand-off once it’s cooked, but there’s still a bit of preparation needed. Make a batch at the beginning of the week and use it all week!
- Cucumber tomato salad – Do this 1-3 days in advance. It’s stored in the fridge wonderfully.
- Hummus and Tzatziki – These are two simple components to prepare in advance if you’re making homemade.
- Tahini Sauce – If you decide to use this, you can easily create the tahini sauce in advance and store it in the fridge until it is ready to use.
How to store and reheat
These Greek chicken bowls are amazing as they are stored very well! It is recommended that you store each component in a separate container. Everything should last in the fridge for 5 days. When you’re ready to enjoy, heat the warm components in the Stovetop or microwave and assemble the burrito bowl!
